Recipe: Couscous Salad

Couscous is by far one of the easiest grains to cook. Not only that, it’s super healthy! Couscous is a complex carbohydrate similar to rice, but with hardly any fat and about 3 grams of protein.

It’s also versatile. Basically any vegetable can be added to the couscous to make a delicious and filling dinner. Any recipe can be switched around to suit your own taste. Plus, it’s inexpensive and ready in less than 20 minutes!

What you need
-box of couscous (try different flavours as well)
-cherry tomatoes
-fresh Basil
-1 avocado
-1/2 can baby corn
-2 tbps olive oil
-salt, pepper and spices to taste

What you need to do
1) Cook the couscous. Usually, you’ll need about 2 cups of water for every small box of couscous. Follow instructions on the back of the box and you won’t go wrong.
2) Cut all your vegetables into small chunks.
3) Once the couscous is cooked, mix everything together.
4) Add the oil and spices.
5) Let the salad chill for about an hour and serve! If you’d prefer a warmer dish, enjoy right away.
